BEET GREENS

2 - 3 bunches of beets greens (up to 2 quarts), well washed
2 tablespoons butter or olive oil
1 small onion
1 tablespoon flour
1-3 large cloves garlic, minced
Salt and pepper to taste

1) Place the greens, with only the water clinging to the leaves, in a large kettle, add salt, cover tightly and cook until wilted.

2) Meanwhile, heat the oil or butter and saute the onion until golden.  Sprinkle the flour and stir to mix.

3) Add the onion-flour mixture to cooked greens and heat, stirring until mixture thickens slightly.
