Stir-Fried Choy in Sweet & Spicy Peanut Sauce

1T         soy sauce
1T         hoisen sauce
1T         peanut butter
1/2t       sugar
2 1/2T    peanut oil
1           medum head choy, stalks separated from leaves, both cut thin
1t          hot red pepper flakes or 1T asian chili garlic sauce
1/2 t      grated fresh ginger
1/3 cup  honey-roasted peanuts, chopped course
 
1.  Combine soy sauce, hoisen sauce, peanut butter & sugar in small bowl
2.  Heat 2 T of peanut iol in large skillet over high heat until almost smoking.  Add the choy stalks and cook until lightly browned, 5-7min.  Clear a space in the center of the pan and add the pepper flakes giner & remaining 1/2T oil.  Cook, stirring frequently, until fragrant, about 30 seconds.  Add the choy greens and soy sauce mixture.  Cook, stirring frequently, until greens are wilted & tender, about 1 minute.   Sprinkle with the peanuts.
