SPAGHETTI SQUASH SALAD
Slice squash in half and remove seeds.
Soften squash by placing each half, cut side down, in few inches of water in
bowl or plate.
Microwave for 10 minutes. Scrape squash
out, separate strands and cool.
When cool, mix squash with:
- 2-3 red, green or yellow peppers
- grated carrots (optional)
Top with:
- a handful of chopped walnuts
- balsamic vinagrette dressing to taste
- grated parmesan or romano cheese
- salt and pepper to taste
