Braising Greens in Miso-Citrus Marinade
When it’s just too hot to cook with heat, try “cooking” your greens the Raw
Foods way – this recipe is so delicious, you just might be hooked! Try this
marinade with other vegetables, too.
(Serves 4-6)
3 tablespoons white miso (available at the Food Co-op or natural foods stores)
2 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon maple syrup or honey
2 tablespoons umeboshi plum vinegar*
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
2 tablespoons fresh ginger, peeled & minced
2 tablespoons scallion, minced
1 clove garlic, minced
1 pound braising greens (or any other leafy greens that you would typically cook
before eating)
1. Mix all marinade ingredients in a medium bowl and whisk until combined. Set
aside.
2. Wash greens and chop into bite-size pieces, and place in a large bowl.
3. Pour marinade over greens and let stand at least 30 minutes.
4. Serve at room temperature.
*If umeboshi plum vinegar is not available, try 1 & 1/2 tablespoons lemon juice
+ 1/2 teaspoon salt.
